Grammy's Banana Bread

  • 1 cup of sugar
  • 1 stick of butter/margarine
  • 1 egg
  • 3 bananas (peeled & mashed)
  • 3 Tbsp of milk
  • 1 tsp of baking soda
  • 1 tsp of baking powder
  • 2 cups of flour
  • OPTIONAL BUT YUMMY: walnuts & chocolate chips!

Preheat oven to 350 degrees. Mix all ingredients together in mixing bowl and pour into loaf pans ( I prefer to do it in 2 loaf pans and create two shorter loafs ). Bake for 45 minutes or longer, until you can put a toothpick and have it come out clean (except if you hit a chocolate chip!).

Mom's Chicken Divan

  • 20 oz. package of broccoli spears
  • 4-6 chicken breasts precooked (chopped or sliced)
  • 2 cans of cream of chicken soup
  • 1 cup of mayonnaise
  • 1 tsp of lemon juice
  • 1/2 tsp of curry powder
  • 1/2 cup of shredded Cheddar cheese
  • 1/2 cup of soft bread crumbs/stuffing mix (Pepperidge Farms etc.)
  • 1 Tbsp of melted butter

Preheat over to 350 degrees. Cook broccoli and drain. Arrange broccoli in lightly greased 9x12 dish. Place chicken on top. Combine soup, mayonnaise, lemon juice, and curry powder until well mixed in a bowl. Pour mixture over chicken & broccoli. Sprinkle the Cheddar cheese on top, then the bread crumbs, and finally drizzle the melted butter on top. Bake at 350 degrees for 30 minutes until lightly browned and bubbly.

Mom's Swiss Chicken

  • 6 slices of Swiss cheese
  • 4-6 precooked chicken breasts (sliced or chopped)
  • 1 can of cream of chicken soup
  • 1/2 cup of milk
  • 2 cups seasoned stuffing mix bread crumbs (Pepperidge Farms etc.)
  • 3-4 Tbsp butter melted

Preheat oven to 350 degrees. Arrange chicken in lightly greased 9x13 baking dish. Top with Swiss cheese. Combine soup & milk and stir until well mixed. Spoon sauce over chicken. Sprinkle stuffing mix over top and drizzle melted butter over crumbs. Bake at 350 degrees for 30-45 minutes until lightly browned.
