- 20 oz. package of broccoli spears
- 4-6 chicken breasts precooked (chopped or sliced)
- 2 cans of cream of chicken soup
- 1 cup of mayonnaise
- 1 tsp of lemon juice
- 1/2 tsp of curry powder
- 1/2 cup of shredded Cheddar cheese
- 1/2 cup of soft bread crumbs/stuffing mix (Pepperidge Farms etc.)
- 1 Tbsp of melted butter
Preheat over to 350 degrees. Cook broccoli and drain. Arrange broccoli in lightly greased 9x12 dish. Place chicken on top. Combine soup, mayonnaise, lemon juice, and curry powder until well mixed in a bowl. Pour mixture over chicken & broccoli. Sprinkle the Cheddar cheese on top, then the bread crumbs, and finally drizzle the melted butter on top. Bake at 350 degrees for 30 minutes until lightly browned and bubbly.
